Whole Wheat & Flax Meal Tortilla




Made those last week and gobbled up every single one of them in two days. I just got back from a hot yoga class which I decided to do today to support my training. Will talk about my progress (or regress^^) this weekend! Must eat now!!!

Ingredients*:
3 cups whole wheat flour (minus 3 tablespoons)
3 tablespoons flax meal
1/4 tablespoon baking powder
1 teaspoon salt
1 tablespoon of each: chili powder, paprika powder, grounded ginger, nutritional yeast
3 tablespoons olive oil
1 cup warm water


Directions:
1. Mix dry ingredients in a bowl.
2. Add oil and water.
3. Kned dough well with hands until everything thoroughly combined. Form a ball.
4. Cover in saran wrap and let sit for 10 minutes.
5. Cut into 8 separate pieces and form each into a ball shape. Cover separately in saran wrap once again.
6. Throw in an ungreased baking pan and bake on the stove (adjust heat!) until bubbles form, then flip and bake on the other side until golden brown in color.
7. Indulge while still warm!



Use immediately, store in the fridge or freezer for future use!!!

What I Ate Wednesday #5

Spring is here and with it comes one thing that's unfortunately not so great: Pollen!! I can't see them yet (remember those white things flying around at some point??) but I can definitely feel their presence. Invisible danger on its way!! -.-

But on a much more positive note:

Nothing beats a breakfast with crunchy bacon strips....
Agreed??



Bed of veggies, salmon filet on top with butter-rosemary sauce


For dinner I just threw together some organic lox, fresh baby spinach, brussel sprouts, black olives and two overly ripe cherry tomatos. Do not be fooled by the tiny picture, the lox was actually 100g straight out of the package. Anyone else feels the need to eat the entire thing at once? I mean, who wants their frigde to smell like smoked fishyyyy?? Certainly not me.
And there is only one way to take care of this issue. Send it to a place where it will be well taken care of...(and where the sun ain't shining) muhahahahahAHHAAHHAarrrrr!

Then unfortunately I made the huge mistake of opening this:

I never tried cashew butter before && I just have one advice for you guys:

Don't try it!
It's pure creamy deliciousness, you won't be able to keep your finger
spoon out of the jar. I ate more than half of this jar in one sitting with some lowfat greek yoghurt. Do not follow my example if you're working on that beach body.
Although we all know a girl's gotta got to indulge once in a while :)

So this past week was not my best, work-out and/or diet-wise. Instead of high protein meals and complex carbs I had a late birthday cake, drinks, a muffin, blablabla too much crap really and way too little veggies. Boobooooo
And I wasn't consistent with my workouts either, I should have written "slacker" on my forehead, so that's why for the upcoming week I created a workout schedule to stick to (Thanks Viki for telling me how to do that chart!).
Of course I'm secretly hoping that posting my workout schedule on here will motivate me enough that I actually get my butt off the couch and really get on it!!! I want to be a tough mudder after all, and that certainly doesn't come easy.
I gotta work for it or I will fail miserably and be left lying face down in the mud ^^

The next week is going to be super stressful for me, with so many appointments and things to do it can be really hard to navigate. Between school, work and some more school I will have to try hard to not lose my sanity (and maybe even find some time to study??). So that's why it's really important to have your workouts planned out, even when you are super busy you can always spare 12 minutes of your day and find time to exercise!!
12 minutes, that's all you need.
Sometimes I even do workouts that only take 4 minutes.

P.s.: Daylight savings time today kicked me in the nuts real bad. And that must count double at least regarding the fact I don't even have any. Haarharrr

Coconut Protein Bars




Whenever I am finding myself in the kitchen, I am always aiming for delicious food that comes together fast and that is so incredibly easy to make that even the last moron on planet earth could recreate it. That's basically the only kind of recipe you will ever find on this blog... nothing too fancy schmancy! Whenever I look for recipes first priority is that they come together easy and most importantly: quick! I am on a tight schedule and simply don't have the time to stand in the kitchen and cook/bake for hours. Although I'd really love to sometimes ... sigh

So I made these coconut protein bars the other day and asked on twitter if you guys wanted to see the recipe on my blog and was flattered how many of you answered :) yayyy!
Well, there you have it.. the recipe for yummy coconut flavored protein bars with a hint of vanilla.. they are just perfect in every single way.


these protein bars are:

coconutterly in flavor
high in protein
moist
nutritious
healthy
easy to make
sugarfree if you wish


Ingredients:
(original recipe adapted from the bodyrock website)


1,5 cup of nut meal (I used grounded almonds)
3 cups of oats
165 ml of coconut milk
1/2 cup of shredded coconut
cinnamon (I just took the bottle and threw it on there to be honest)
4 tablespoons of vanilla protein powder
10 drops of stevia


Directions (for idiots really):

Throw everything together in a bowl and mix well. Spread on a non stick baking pan and throw in the oven at 175° for about 15-20 minutes or until golden brown in color!!
Enjoy immediately, refrigerate or freeze for further use!



Side note: The vanilla protein powder I used contained sugar and also some sort of sugar substitute (not aspartame!), so I guess my protein bars turned out sweeter. I'd love to have unsweetened vanilla protein powder, but I am still unsure whether or notI should make the huge step and order a big box over the internet... hmmm we will see! Until then, this will have to do I guess :(

What I Ate Wednesday #4



Good Morning, luvs ♥

Welcome to another edition of WIAW on this beautiful bright spring morning!!
Want to know the one thing that makes me get out of bed every day??

COFFEE!!

And serving it in my happy cup makes me happy :) it's the little things..
Sipping from the exact same cup right now:

another green protein smoothie for my daily greens.

It contained:

1 frozen banana
2 table spoons of wheat bran
big scoop of vanilla protein powder
handfuls of fresh baby spinach
1 kiwi
water


Then it was time for a quick breakfast wrappie:

in the picture it's already half eaten...oooopsie!
little bit of scrambled egg, feta cheese, spinach, bellpepper (the orange ones are my favorite)


After a couple of hours at uni I am always hungry like a wolf or should I say J'ai une faim de loup (= the only phrase I remembered from taking French class for 6123712639 years ^^)
Sooo.. I got myself a Aborigines Weckerl (contains seeds, carrot bits, peas, walnuts!) with multiple slices of Gouda cheese...

After a long long day at school we stopped at Vapiano for my favorite prawn salad (extra parmesan on top, s'il vous plaît)
I think I have eaten this over 200 times in my life.

And then.. the highlight of this past Wednesday night was definitely dinner (sorry Vapiano)!!!
We were invited to a "couples night" aka evening with old friends at S & H ♥ 2-story apartment overlooking Vienna's skyline..

Everything was so tidy and cosy, I hope that I can live like this someday :)

S served us this:


It was sooo good and I was really impressed by her cooking skills.
When she told me it didn't require that much effort I was even more surprised.
I am SO trying to recreate this at some point!!

The chicken was extremely tender & tasty and I loved how she mixed olives and capers with it!!
She confessed to me that she tried to come up with something extra healthy because she knew it would most likely be featured on my health blog hahaha!

There were also multiple glasses of white whine involved and some gin tonic.
Great stories were shared and I really enjoyed the entire night!

Dear 16 Year Old Me



Hiii guys :)

Please take 5 minutes off whatever you're doing and watch the video above. You might've already seen it before, but I just thought about it this instant and wanted to quickly share it with you. Because your health is one of my greatest concerns ^^

One thing on my personal to-do list is to finally get my skin checked by a dermatologist. Being in the medical field I know how important it is to get regular check ups, especially when your medical history is significant for accumulative sun damage in the youth.
I am gonna go try to schedule an appointment asap and so should you!

Also, there is actually something you can do for yourself:
if you have a lot of birth marks (naevi), document them! Take pictures if necessary and examine yourself regularly. This will help you notice changes in colors, diameter or shape early on.
Get to know your body!!


Tell your family and friends.
